PACAYAL Coffee was founded in 2014 by Karen and Edgar Carrillo, motivated by a strong unemployment crisis in Marcala that was aggravated by Roya’s disease in coffee cultivation.
They promote direct trade and sustainability, varying from all-female producer clusters, to research in the fields of organic fertilising, CO2 sequestration and low carbon coffee production.
This unique coffee is produced in cooperation with over 400 families focusing on sustainable coffee practices which are very important to the Honduran community.
The Montecillos region is located in the central-western part of Honduras, known for some of the highest quality coffees benefited by staying with traditional methods of selection when it comes to planting and growing.
Marcala is the lushest, purest land for growing coffee in the region, particularly special for high altitude above 1300 M and tropical micro-climate with right temperatures for healthy growth, with cold nights allowing ripening more slowly and developing a sweeter flavour. These best, most sought out conditions turned Marcala’s coffee into work of art.
